This is not a recipe for something delicious. This is a delicate story of how to make ends meet.
Melt the butter in a small pan, add the flour and stir over until blended. Gradually add the milk, add mustard, nutmeg, sea salt, black pepper; and keep stirring.

Set aside.

This is the bechamel sauce.

Spread again the joy (butter). Toast the bread one side and turn it over. Add thyme.

Repeat. This is for two.

Preheat the grill to high. Get a griddle and cover it with a wax paper. Place the toasts on it. Be gentle; it’s a Madame afterall. Spread the bechamel sauce on the bread. You must be generous. Add cheese and ham and thyme and pepper (black it is). Put the griddle into the oven. Keep calm and carry on until the cheese melts.

This is what you get.

Get some eggs. (You know how to crack an egg into the pan). Top the toasts with the eggs.They should look like these. Keep staring.

Serve with some rocket leaves. You’re almost there.
